Ruby & Milk Chocolate Cookies

I love soft and chewy double chocolate cookies, they are super simple to make as well. Ruby Chocolate is available in our store, to buy in small bags, handy for home baking and snacking. You’ll need (makes 12): 50g unsalted butter250g chocolate, roughly chopped  200g ruby chocolate 2 eggs170g brown sugar – any will do85g plain flour½ tsp of vanilla essence½ tsp salt½ tsp baking powder Method: 1. One of my favourite recipe that I use not only at home, but also at work. Who doesn’t love gooey, chewy meringue? These mini delights are infused with instant espresso, giving a bitter oomph to the sweet, marshmallowy meringue, whipped cream and toasted hazelnuts – a delicious coffee break treat to keep you going whilst working from home.
